Canyon races has already suggested for couple of times in the past. It won't be added. due to MTA's bad collision synchronization. And playing canyon races without collision is simply nonsense. There are some people who interested to do canyon or touge races on the server in freerun mode, you can try joining them.

Again, it would be nice to have Canyon Races in the server, but MTA doesn't have good collision sync and the devs would have to create canyon maps from scratch since they don't like adding stuff they don't make
